Healthy Recipes: Delicious Pancakes without Sugar

For many, pancakes are simply a part of Sunday brunch. We say that you can enjoy this healthy variant not only for breakfast, but also as a snack in between. With this recipe you can easily prepare fluffy and healthy pancakes. You can also vary this simple basic recipe as you like.

We use wholegrain spelt flour in our recipe, which is considered particularly healthy with its valuable nutrients. The healthy cereal contains Vitamin A and B and a large amount of fiber, which can support healthy digestion. In addition, spelt contains a high proportion of silicic acid, also called silicon, which supports the water-binding capacity of the body proteins and thus increases the moisture and elasticity of blood vessels and skin. Premature aging processes in the tissue can thus be counteracted. Silicon is also important for hair and bones. Spelt can also brighten your mood because the tryptophan it contains can be converted by the body into serotonin – the happiness hormone. The healthy grain can also score points in terms of taste. It is characterized by a slightly nutty aroma and can be used for many delicious dishes.

Ingredients for delicious Pancakes without Sugar

  • 350 ml almond milk
  • 200 g wholegrain spelt flour
  • 3 eggs
  • 2 pinches sea salt
  • Coconut oil
  • Blueberries – or berries of your choice
  • Rice syrup

Preparation of the delicious Pancakes without Sugar

Step 1
First separate the eggs and then put the egg whites in a clean and grease-free bowl or mixing bowl. If, for example, fat or traces of egg yolk get into the egg white, the beaten egg white will not firm up properly later. Beat the egg whites with a pinch of sea salt until firm.

Step 2
Place the egg yolks in a mixing bowl and beat until foamy. Then stir 350 ml almond milk, 200 g wholegrain spelt flour and 1 pinch of sea salt well into the egg yolk mixture.

Step 3
Now gently fold the beaten egg whites into the batter to make a fluffy mixture.

Step 4
Put some coconut oil in a pan and heat over medium heat. Pour the batter into the pan in batches and fry the pancakes for about 2 minutes on each side until golden brown.

Tip:
You can serve the pancakes in different ways. There are no limits to your imagination. Almond butter, rice syrup, applesauce, blueberries, strawberries and many more delicious toppings are possible. You can also modify the basic dough as you like and, for example, add fruit, coconut flakes, oat flakes, cinnamon or nuts directly to the dough and bake it. You can also easily freeze these pancakes. However, make sure you put some baking paper between each pancake. The pancakes can then simply be reheated in the oven.
