Grandma’s apple pie – everyone knows it and everyone loves it. Especially in autumn and at Christmas time it is very popular. It is not only a real treat as a dessert, but also very popular as a gift when you are invited to dinner. We use rice malt for sweetening. With its mild sweetness, it gives the apple pie a rich soft caramel flavor.
Rice malt is a traditional natural sweetener from Japan. It is derived from whole rice and is a sugar beet syrup-like food that is thickened by boiling down without any other ingredients. It has a rich, dark brown color and is malty in flavor. Rice malt is suitable for health-conscious sweetening of dishes – whether salads, desserts or sauces.
Few ingredients, delicious apples and a big portion of love – that’s all you need for our juicy apple pie like grandmother made it.

Ingredients for the Grated Apple Pie
- 10 apples
- 200 g raisins
- 80 g grated almonds
- 30 g rice malt
- Cinnamon powder
- 400 g whole spelt flour
- 1 package of yeast
- 1 tsp sea salt
- 5 tbsp olive oil
- 300 ml water
Preparation of the Grated Apple Pie
Step 1
First of all, prepare the dough so that it can still rise. To do this, add all the ingredients in a bowl and knead them into a dough. Cover it with a tea towel and set it aside in a warm place or place the covered dough in a heated oven – 50°C for top/bottom heat – until it has visibly increased in size. Keep the oven door open with a wooden spoon so that the dough does not get too warm.
Step 2
In the meantime you can grate the apples.
Step 3
Mix the grated apples and all the remaining ingredients in a large bowl.
Step 4
When the dough has risen, spread it on the baking tray. To make the base airy, prick the dough several times with a fork.
Step 5
Now spread everything on the spelt cake dough and put the whole thing in the oven for 40 minutes at 175 degrees / convection oven – medium setting.
Tip:
We recommend to serve it with a vanilla soy dessert. The apple pie also remains juicy for a long time. Simply store the leftovers in the refrigerator and enjoy it over the next few days. It can also be frozen.
