The apple strudel is world famous. In our recipe we tell you not only a delicious, but also a healthy version of this classic. Homemade – still slightly warm – apple strudel goes perfectly with a cold autumn day.
ingredients
For the dough:
- 300g wholegrain spelled flour
- 1 pinch of salt
- 125-150ml water
- 4 tbsp coconut oil
For the filling:
- 750g apples (slightly sour)
- 25g grated almonds
- 25g grated hazelnuts
- 2 pinches of cinnamon
- 1 tbsp rice malt
- 1 pinch of vanilla extract
- 1-2 handfuls of raisins
- Crushed walnuts
- 1 tbsp apple juice
- Rice milk
Step 1
Put the flour in the bowl, add the salt and oil and mix everything together. Then knead the mass with the water to a fine dough. Shape a ball and let it rest for about 25 minutes.
step 2
In the meantime, peel, core and finely grate the apples. Put all remaining ingredients – except for the rice milk – together with the apples in a bowl and mix together.
step 3
Roll out the dough very thinly, but make sure that no cracks appear. Then distribute the apple mixture on the dough and roll up the whole thing.
Step 4
Brush the apple strudel with rice milk and brown at 200 ° C for about 25-30 minutes. Since every oven is a little different, adjust the baking time if necessary until the desired browning is achieved.
- Our tip: If you can’t do without powdered sugar, take the healthy xylitol variant.
