Our vegan herb spread is not only extremely healthy, but consists of only a few ingredients and is prepared very quickly. Depending on the season and your preferences, you can prepare your spread with different herbs and spices individually. As a basic ingredient we use sunflower seeds. We have refined our recipe variant of the herb spread with parsley, chives and garlic. However, you can conjure up a variety of spreads – for example, with olives, pumpkin, zucchini or fresh horseradish.
In organic supermarkets you can find a variety of ready-made spreads, but they often contain unhealthy additives such as sugar or bad fats like sunflower oil. With this recipe you can easily and quickly prepare a healthy and very tasty spread. Instead of sunflower seeds, you can also use cashews or nuts.

Young sunflowers always turn their heads towards the sun – they symbolize joy and vitality and they pass this on to us with their seeds as food. The healthy seeds have a positive influence on the cardiovascular system and blood circulation and have a rejuvenating effect on skin, hair and cells due to the antioxidants they contain! Also for healthy bones and teeth helps the consumption of the seeds.

Ingredients for the Vegan Herb Spread
200 g sunflower seeds
250 ml water
1 bunch of parsley
1 handful of chives
1 onion
1 clove of garlic
2 tbsp. lemon juice
1 tbsp. canola oil
1/2 tsp sea salt
1 pinch of pepper
Preparation of the Vegan Herb Spread
Step 1
First, soak the sunflower seeds in 250 ml of water for several hours.roughly and cut them into small cubes. Then wash the chives and cut them into fine rolls.
Step 2
Finely dice the onion and garlic and sauté them briefly in 1 tablespoon of canola oil.
Step 3
Pour the water off the sunflower seeds and put them in a blender with the rest of the ingredients except the herbs. Blend until you get a creamy consistency.
Step 4
Season the spread with salt and pepper and then add the finely chopped herbs.
Tip:
Prepare the vegan herb spread early, so that it can soak well in the refrigerator. You can also stir different herbs such as wild garlic, dill and coriander or spring onions into your vegan herb spread. The spread will keep for several days in the refrigerator – depending on the ingredients, the aroma can gain in intensity.

The recipe overall looks healthy and delicious. I’m wondering though, why you specifically put canola oil in as an ingredient? That is a terrible oil for health, usually is GMO and very inflammatory. Avocado or olive oil would be better for health….just saying.
