Healthy Recipes: Homemade Vegetable Stock Paste

With this recipe we show you how you can easily make a fine and healthy vegetable stock paste yourself with just a few ingredients. Whether for a broth, to refine your vegetables, in homemade spreads or in sauces and soups – our homemade vegetable stock paste is a fine addition to numerous dishes. And the best part – homemade vegetable broth is not only very healthy, but consists of only a few ingredients and is very quick to prepare. Depending on the season and your preferences, you can prepare it individually with different herbs and spices. You can store the vegetable stock paste in a boiled screw-top jar for several weeks in the refrigerator. To make a liter of broth, you need about 3 heaping teaspoons of the vegetable paste.

You will notice that homemade vegetable broth is much more aromatic and high quality than store-bought vegetable broth. The common instant powders from the supermarket often do not contain high-quality sea salt and consist of powder with added flavors, yeast, sugar and unhealthy preservatives.

Always and in any case we recommend you to buy herbs and vegetables in organic quality, so that your vegetable broth is free of pesticides and other harmful substances. You can also easily grow herbs in your own garden.

Ingredients for the Vegetable Stock Paste

  • 1 carrot
  • 1 leek
  • 200 g celeriac
  • 120 g onion
  • 1 clove of garlic
  • 20 g parsley ( 1 bunch)
  • 1 tablespoon canola oil
  • 80 g sea salt

Preparation of the Vegetable Stock Paste

Step 1
First wash and peel the vegetables and then cut them into coarse pieces.

Step 2
In a food processor or blender, put the vegetables, 1 bunch of parsley, 1 tablespoon of canola oil and 80 g of sea salt and blend until a fine paste is obtained.

Step 3
Fill the vegetable paste into clean, boiled screw-top jars and store in the refrigerator.

Tip:
You can also use other herbs like dill, chervil, lovage or coriander. Depending on taste and season, you can vary the ingredients and make your very own vegetable mixture. To prevent the vegetable paste from going bad, always remove it from the jar with a clean spoon.
