Ingredients for the Vegan Chickpea Cookies
- 1 can of chickpeas (265g drained)
- 90g oat flour
- 45g coconut oil
- 1 teaspoon apple cider vinegar
- 100g rice malt
- 1/2 teaspoon baking soda
- 1/4 teaspoon bourbon vanilla
- A pinch of sea salt
Preparation of the Vegan Chickpea Cookies
Step 1
Preheat the oven to 175 degrees Celsius (347 degrees Fahrenheit) – convection – and line a baking sheet with parchment paper.and line a baking sheet with baking paper.

Put chickpeas, oat flour, rice malt, oil, apple cider vinegar, baking soda, bourbon vanilla, and sea salt in a blender and process all the ingredients into a smooth dough.
Step 3
Chop the chocolate into small pieces and distribute them on the cookies.

Shape the dough into walnut-sized balls and place them on the parchment-lined baking sheet. Slide the sheet into the center of your oven, preheated to 175 degrees Celsius, and bake for 20-30 minutes. After baking, allow the chickpea cookies to cool completely. They will be very soft right out of the oven but will become crispy as they cool.
Tip: These delicious cookies taste best when fresh. However, you can also store them in an airtight container for up to one week or freeze them for up to 3 months.
