Healthy Recipes: Vegan Broccoli Soup

This healthy and tasty soup is ideal when you have not so much time to cook. For our recipe you need only a few ingredients. If you don’t have fresh broccoli on hand, you can also use frozen broccoli. The sweet potato makes this soup even creamier and gives it a slightly sweet taste. Vegan Broccoli Soup is super simple, very creamy, quick to make and always works.

Did you know that broccoli is a real superfood? Because of its ingredients, broccoli is healthy like no other vegetable. In addition to bone-strengthening calcium and selenium for cell protection, broccoli contains a lot of iron for the blood. The popular cabbage variety originally came from Asia and found its way to Europe via Italy and Greece. You can recognize fresh broccoli by its strong green color. If stored in a cool place, it can last up to five days. Basically, you can process everything from the head to the leaves to the stalk of broccoli. To do this, dice the stalk and cook it together with the florets.

Ingredients for the Vegan Broccoli Soup

  • 500 g broccoli florets
  • 1 small sweet potato
  • 1 onion
  • 1 clove of garlic
  • 1 tablespoon coconut oil
  • 100 ml coconut milk
  • 600 ml water
  • sea salt
  • black pepper
  • nutmeg

Preparation of the Vegan Broccoli Soup

Step 1
Wash the broccoli florets thoroughly and cut the onion and sweet potato into small cubes.

Step 2
Fry the garlic and the onion in coconut oil. Add the broccoli florets and sweet potato cubes and deglaze with 600 ml of water. The water should just cover the vegetables. Let it cook for 20 minutes until soft.

Step 3
Before pureeing, add the coconut milk.

Step 4
Refine the soup with sea salt, black pepper and a little nutmeg.

Tip:
Garnish the soup with toasted almond flakes and some coconut yogurt. You can also freeze the Vegan Broccoli Soup, so it will keep for several months.
