Ingredients for the Vegan Broccoli Soup
- 500 g broccoli florets
- 1 small sweet potato
- 1 onion
- 1 clove of garlic
- 1 tablespoon coconut oil
- 100 ml coconut milk
- 600 ml water
- sea salt
- black pepper
- nutmeg
Preparation of the Vegan Broccoli Soup
Step 1
Wash the broccoli florets thoroughly and cut the onion and sweet potato into small cubes.
Step 2
Fry the garlic and the onion in coconut oil. Add the broccoli florets and sweet potato cubes and deglaze with 600 ml of water. The water should just cover the vegetables. Let it cook for 20 minutes until soft.
Step 3
Before pureeing, add the coconut milk.
Step 4
Refine the soup with sea salt, black pepper and a little nutmeg.
Tip:
Garnish the soup with toasted almond flakes and some coconut yogurt. You can also freeze the Vegan Broccoli Soup, so it will keep for several months.
