Did you know that oats have many wonderful properties that make it a real “superfood”? It is a healthy and very nutritious grain. Oats contain biotin for beautiful skin and hair – vitamins B1 and B6 for strong nerves and a balanced psyche – iron and magnesium are also rich in oats. It is one of the best fiber combinations and a very good supplier of silicon – which is important for bone health. You can incorporate oats into your diet in a variety of ways. Not only can you use the flakes in oatmeal or when baking cookies. In savory dishes, oats make a great base for vegetarian burgers, and finely ground they can thicken sauces and soups.
The beauty of this recipe is that it can be adapted any way you like. You can basically add all the dried fruits, nuts, kernels and seeds that you want or have at home. For example, you can also add some chopped apples and cinnamon or even ginger to the raw dough. There are no limits to your imagination.
Ingredients for the Vegan Oatmeal Cookies
- 150 g oatmeal
- 100 g brown rice flour
- 1 tbsp almond butter
- 50 g nuts and seeds
- 50 g raisins
- 3 tbsp rice malt
- 1 tbsp coconut oil
- 1 pinch of sea salt
- 200 ml of water
Preparation of the Vegan Oatmeal Cookies
Step 1
Preheat the oven to 175 degrees – convection – and line a baking sheet with baking paper.
Step 2
Mix 150 g of oatmeal, 100 g of brown rice flour and 1 pinch of sea salt in a bowl.
Step 3
Chop 50 g nuts and add them together with 50 g raisins.
Step 4
Now add 3 tablespoons of rice malt, 1 tablespoon of coconut oil, 1 tablespoon of almond butter and 200 ml of water to the other ingredients and mix everything together until you get a nice dough.
Step 5
Shape the dough into balls the size of a walnut and place them on the baking tray lined with baking paper. Place the baking tray in the middle of your oven at 175 degrees for 20-30 minutes. After baking, allow the oatmeal cookies to cool completely. They are still very soft right out of the oven, but become crispy as they cool.
Tip: These delicious cookies taste best fresh, of course. But you can also store them very well in an airtight tin for up to a week or even freeze them for up to 3 months.
