Healthy Recipes: Vegan Sweet Potato Falafel

With this recipe we show you how to prepare very quickly and easily these fine falafel with sweet potato.

You can enjoy them warm, but also cold and they are ideal as a snack, side dish, lunch or dinner.

Originally, falafel balls are prepared only with chickpeas. However, sweet potato adds a sweet note to the delicate balls and makes them nice and juicy. The sweet potato is also packed with valuable vital and nutritious substances. It is one of the oldest vegetables and is popular as a staple food in many countries. However, it has nothing in common with the potato. The potato belongs to the nightshade family – the sweet potato, however, is a wind plant.

Ingredients for the Vegan Sweet Potato Falafel

  • 600 g sweet potatoes
  • 240 g chickpeas, drained weight
  • 160 g chickpea flour
  • 1 onion, finely diced
  • 2 tablespoons fresh parsley
  • 1 tsp sea salt
  • 1 tsp cumin
  • coconut oil

Preparation of the Vegan Sweet Potato Falafel

Step 1
Wash and halve the sweet potatoes and bake them in the oven at 200 degrees for about 30 minutes until soft.

Step 2
Hollow out the sweet potatoes and put them without the skin in a blender with the 240 g of cooked chickpeas, 160 g of chickpea flour, 2 tablespoons of fresh parsley, 1 onion, 1 teaspoon of sea salt and 1 teaspoon of cumin and blend all the ingredients thoroughly.

Step 3
Now you can form small balls and fry them with enough coconut oil in a pan until golden brown.

Tip:
Instead of chickpeas, you can also use cooked beans or lentils.
