Healthy Recipes: World’s Best Vegan Gravy with Vegetables and Rice

I am often asked how I manage to prepare this very tasty gravy completely without unhealthy flour and animal products. The answer is quite simple and I will show you in this recipe how to delight your guests with a fine and very healthy vegan gravy.

In a good gravy, the roasted flavors play a special role. These are created by the so-called – Maillard reaction – which is the reaction that leads to browning and crispiness and to the smell of freshly baked bread, roasted grain coffee, fried onions … in short: the Maillard reaction, which does not mean chemical mace, which means the perfect roasting. The Maillard reaction was named after the French chemist and physicist Louis Camille Maillard. At the beginning of the 20th century, he discovered that the amino acids of protein-containing foods react with the sugar molecules they contain in a temperature-dependent manner, resulting in roasted aromas and a crispy, brown crust.

We served our gravy with vegetables and smoked tofu. It goes wonderfully with a healthy brown rice or even millet.

Ingredients for the World’s Best Vegan Gravy with Vegetables and Rice

  • 1 cup brown rice
  • 2 carrots
  • 1 small zucchini
  • 1 package of smoked tofu
  • 1 onion
  • Coconut oil
  • 2 tsp kuzu
  • 1 tbsp shoyu
  • Sea salt and pepper
  • Parsley

Preparation of the World’s Best Vegan Gravy with Vegetables and Rice

Step 1
Soak the brown rice for 8-24 hours. Then pour away the water and use fresh water to cook the rice.
Cook the brown rice first, as it has a cooking time of about 30 minutes. Meanwhile, you can prepare the dish.

Step 2
Peel and chop the onion and fry it in some coconut oil in a large pan or wok until brown.

Step 3
Wash and chop the carrots and zucchini. Now add them to the onions and lightly fry the vegetables.

Step 4
Cut the smoked tofu into small cubes and fry them in some coconut oil until hot.

Step 5
In a cup, mix 200 ml of water with 2 tsp of kuzu and 1 tbsp of shoyu. Deglaze the sautéed vegetables with it. When you have tasted the sauce, you can stir in the fried tofu cubes.

Step 6
After the rice is cooked, you can serve it with the sauce on a plate and garnish with parsley.

Tip:
Cook a larger amount of brown rice for a whole week in advance. This way you only have to heat it up for your dishes and save time when cooking. Rice can be stored in the refrigerator for up to 7 days without any problems.
